Why Do You Need to Adjust?

An air fryer is essentially a compact convection oven. Its heating element and fan sit directly above the food, circulating hot air at high speed in a very small space. This makes it significantly more efficient than a conventional oven, where heat rises unevenly and the air moves slowly. The result: the same food cooks faster and at a lower temperature in an air fryer — typically 20% quicker and 28°C (50°F) cooler when converting from a conventional oven recipe.

Fan Oven vs Conventional Oven

🔥 Conventional Oven

No internal fan. Heat rises from the bottom element and distributes slowly. Requires the largest adjustment: reduce temperature by 28°C / 50°F and cut time by ~20%.

💨 Fan / Convection Oven

Already uses a fan to circulate air — closer to an air fryer. Smaller adjustment needed: reduce temperature by 14°C / 25°F and cut time by ~20%.

3 Tips for Converting Oven Recipes

    Check at the halfway point.Flip or shake the basket. Air fryers cook unevenly if food isn't rotated — the bottom browns faster than the top.

    Don't overcrowd the basket. Air fryers rely on air circulation. If food is piled up, it steams instead of crisping — cook in batches if needed. If cooking a large piece, use our cooking time by weight calculator to adjust timing.

    Use a meat thermometer for proteins. Don't rely on time alone — check internal temperature. Poultry: 74°C / 165°F. Ground meat: 71°C / 160°F. Whole-cut beef and pork: 63°C / 145°F with a 3-minute rest. Fish and shellfish: 63°C / 145°F. Also note that some air fryer brands run hotter than others — Ninja in particular tends to need a slightly lower temperature.
