Tips

  • Pat dry before cooking — surface moisture prevents crust formation
  • Preheat basket 3–5 min at 200°C before adding steak
  • Flip once at the halfway point
  • Rest 5 minutes after cooking — pull 3°C below target temp
  • Salt right before cooking or 45+ min before — never in the 5–30 min window
  • Let thick steaks (3 cm+) rest at room temp 20–30 min before cooking
  • Apply sugary glazes only in the last 90–120 seconds
