Variants: muffins, cupcakes, brownies, banana-bread, pound-cake, cookies, dinner-rolls, biscuits.

Tips

  • Reduce temperature by 25°F (14°C), not the full 50°F used for savory recipes
  • Reduce time by 10–15% only — not 20%
  • Check doneness with a toothpick, not color — exterior browns 3–5 min before center is done
  • Fill molds to two-thirds, not three-quarters — batter rises more unpredictably
  • Tent with foil after 20 min for long bakes (banana bread, pound cake)
  • Preheat 3–5 minutes before adding filled molds
  • Use silicone molds — gentler heat than metal, less overbrowning on sides
